For years we have been making rainbow cupcakes for St. Patrick's Day and for some reason I never have put on a picture of the completed project. Well I finally got my act together and took some pictures. They are my kids' favorite to make because they all get to help put the batter in.

We divide the batter into six parts and dye the parts different rainbow colors. Each kid gets a color to add to the cupcake.

The tiny
leprechauns also made it back this year--the trap that the kids made still didn't seem to catch one of those tricky little guys.

The Rainbow cupcakes . . .and a new recipe that I made for
enrichment the same day: Vanilla white chocolate with blackberry butter cream and a orange blackberry glaze. Thank you Amy for the fabulous recipe.
